BFF Gina and I LOVE Jim n Nicks cheese biscuits. They are scrumptious! And when she told me this morning that she’s been tryin to figure out the recipe…. i couldn’t help but get a craving myself being pregnant and all, had to make some myself since she’s in FL and can’t make for me LOL.
Anyway… this is what I turned up with, but because I’m lame and don’t have a muffin pan I made mine like cornbread. I would have to agree with G that the recipe is WAY too sweet, and too vanilla-y, but because I’m a cooking tard, I don’t know what to add in place of the sugar and vanilla? More milk and flour? I was good not to burn ‘em!! Because I did pour all the batter into the baking dish instead of muffin pans, I did have to cook for an additional 12 minutes, 6 of them with foil on top to avoid burning.
They were still pretty good, and the boys LOVED them… but they were chewy and again way too sweet.
So G, when you get that recipe down, be sure to forward it to me!! In the meantime here is the one that I used- that was too sweet. Feel free to alter and add your recipe for us all to try! Pretty soon Jim n Nick will be hiring us all!!
Ingredients
| 1 1/2 | cups flour |
| 1 | cup sugar |
| 1 | cup shredded cheddar cheese |
| 3/4 | cup 2% milk |
| 1 | egg, beaten |
| 4 | tbsp. butter, softened |
| 1 1/2 | tsp baking powder |
| 1/4 | tsp vanilla |
Directions
Mix ingredients together, pour into greased muffin pan and at 400 degrees for about 20 minutes or until done. (Remember if you use a baking dish instead of muffin pan, cook an additional 12 minutes and 6 of those minutes cover the dish with foil and lower the heat to 375 degrees.)


Ps- while in the middle of writing this post Hunter ran thru the back door extremly upset! I asked him what had happened thinking he fell off the trampoline or a bee got him… Nope, neither… This is what an extremely scared little boy looks like when a jumping spider lundges him and he’s enclosed in the trampoline by the net… lol normally he’s not bother by creepy crawlies at all….
